Sausage seasoning recipe
#1Do any camp chefs here have a sage sausage seasoning they have tried and would be willing to share? I have never been able to come up with the right combination of seasonings and the commercially seasoned stuff just isn’t strong enough for me.

5 lbs meat
1.5 oz fennel seed
1 -1.5 oz salt (I go with 1)
shy 1 oz fresh ginger
.75 oz fresh sage
.25 oz red pepper flakes
.33 oz course ground black pepper
.33 oz brown sugar
I use venison and pork fatback.

#3Here's one from Country Journal Magazine from the 70's that we use. Nowadays we usually
make it with chicken breast ground up. (We use pork for our scrapple though!)
Indiana Farm Sausage
2lbs.lean pork,ground
1/2 lb pork fat, ground
1 onion, ground
1 clove garlic, minced
1 tablespoon each parsley and sage
1 teaspoon each thyme, basil, marjoram,chili powder,cayenne, and black pepper
3 tablespoons ice water
2 teaspoons salt
Great smoked or just cooked on the grill with wood chips

#4Here is what I use. It makes a mild breakfast sausage.
5# pork. Seasoned before grinding.
1 tablespoon dried sage
1/2 teaspoon ground ginger
1 1/2 teaspoon ground mace
1 1/2 teaspoon dried thyme
1 teaspoon marjoram
1 tablespoon kosher salt
I use pork shoulder cut into cubes, add seasoning and grind. I use this for making patties. If you plan to make links you will need to add a little water to loosen up the mix so it will stuff into casings easier.

#5Why is it that our grandfathers never left behind meat recipes for we male descendants? I have a recipe box full of great/grandma’s recipes from both ancestral sides. But they are all baked goods and are remarkably similar to today’s recipes.
I have no idea why, other than a good dose of dumb, why I did not think there was a long list of other ingredients. Sage, salt & pepper? What was I thinking? Probably nothing.

#6You've been offered good recipes, experiment more and I've been given advice on how to cook on an empty stomach. It's different for everyone, but my sense of smell is getting stronger and the food tastes better than usual

#8Cabela's used to have a seasoning package that I liked to use. It was great with ground beef, pork, chicken or turkey. I don't know if they still carry it or not (since Bass Pro bought 'em out). Haven't been to Cabela's in awhile.

#9Ok since someone a few weeks ago said the professionals haven’t spoken up in a bit here goes. One of the classes I teach is sausage making. While I usually make our own seasoning blends, sometimes you just want an easy day. This place has all your sausage, curing and butchering needs. Granted their site s not the easiest to navigate it’s worth it to surf around it.
