For a year once I waited tables at my friend's uncle's Japanese restaurant. I worked Thursday lunch. When the shift ended, the owner would bring out a giant plate of tuna that had been purchased that very morning from the Boston fish market and had just been sliced up by the Japanese sushi chefs. I would grab a miso soup and some seaweed salad and stuff myself on tuna sashimi. Yum!

Tuna is not something that an everyday Joe can go out and catch with your average fishing pole but yes, yum indeed.

In the couple of trips I made to the USA, I became very fond of Pacific Salmon and Halibut.

Coral Trout. It's a crazy rockfish from the south Pacific. I don't think there's an equal.
